Delicious Vegetarian Meal
2 large beets
aluminum foil

Dijon Mustard
2-4 tbsp. butter, salted
Wrap beets in aluminum foil, cutting off green stems but leaving skin and root. Preheat oven to 375 degrees.
Bake beets for 1 1/2 to 2 hours, depending on size of beet.
Take beets from aluminum foil and peel off skin. Cut off root. Dice beet into small, cubed pieces. Throw in butter and tablespoons of Dijon Mustard to taste, while beet is still hot.
Eat. Yumm. It's delicious.
